Keluli tahan karat ialah aloi besi yang mempunyai kandungan Kromium minimum 10.5 peratus.Kandungan Chromium menghasilkan filem oksida kromium nipis pada permukaan keluli yang dipanggil lapisan pempasifan.Lapisan ini menghalang kakisan daripada berlaku pada permukaan keluli;lebih besar jumlah Chromium dalam keluli, lebih besar rintangan kakisan.
Keluli itu juga mengandungi pelbagai jumlah unsur lain seperti Karbon, Silikon dan Mangan.Elemen lain boleh ditambah untuk meningkatkan rintangan kakisan (Nikel) dan kebolehbentukan (Molibdenum).
